By far Bill and Pat’s favorite! Expecting it to be creamy when served correctly at ROOM TEMPERATURE. Sweet flavor with nice crunch texturing from aging. Always surprises us with how amazing it tastes. Typically it’s never extremely sharp given its age which is why its always the most sought after.
An awesome beginner Christmas Cheddar. Still older than what we regularly carry but not as extreme as the 16, 17, or 20 year olds. Slight fruity taste, nice cheddar bite and flavor are to be expected!
Drier and sharper than an orange of the same age but still acquires a sweet, fruity top note. Amazing cheddar for its age.
Along the same lines as the 17 year but Wisconsin tends to taste a little sharper than New York, but still to die for!
Sharp bite with a more dry texture with a nice age crunch.
Typically the strongest tasting of our cheddars but don’t let it shy you away from the one if a kind flavor. This is one of Clayton’s favorites. Won Gold in the 1997 London International Cheese & Dairy Competition.
Soft and creamy. Still a milder blue flavor but packed with the “crunchies” you all know and love. Aging in the Pear Brandy gives it an amazingly unique flavor not come across often.
From what we’ve noticed it likes to get creamier as it ages which definitely does justice to the beloved complex and deep, rich flavor this English Stilton offers.
Nice caramel notes with a hint of almond lingering around the after taste. Always hard and a bit crunchy. Our best selling Manchego that some aging works wonders on.
Sharp, usually softens up a little after this amount of time which makes serving less if a hassle, great with some charcuterie.
We all knew this one was coming! Soaked 7-10 days in Remy Martin, this is ALWAYS a crowd pleaser. Mild sharpness, sweet flavor with low notes of Cognac. *if any other Christmas cheese is purchased in same order*
This blue is no joke! Typically a saltier, stronger creamy blue. With an extra year added it gets dark, crunchy, super creamy, and EXTREMELY tasty and strong. If you love cheese that fights back, this is right up your alley!
